While working a busy lunch rush, once again a dangerous fire broke out in the flue area of our griddle. We have dealt with this problem many times before. We extinguished the flames by quickly emptying cups of salt into the flue area before it got dangerously out of control. The staff takes turns painstakingly contending to the messy clean up...That was the last griddle fire we had!

 

These problematic fires inspired us to come up with a solution to prevent fires from ever happening again in our kitchen.
